  • Raw Lemon & Matcha Cheesecake by @datesandavocados 💚 Recipe: Ingredients: For the crust: ⠀ 1/2 cup almonds⠀ 2 dates, pitted and chopped⠀ 1 tsp maple syrup ⠀ 1/4 tsp vanilla extract⠀ Pinch of salt⠀ 1 tsp coconut oil, melted ⠀ ⠀ INGREDIENTS FOR THE LEMON LAYER: ⠀ 1/2 cup + 2 Tbsp cashews, soaked for 6h⠀ 2 Tbsp almond milk ⠀ 3 Tbsp fresh lemon juice ⠀ 1/4 tsp lemon zest⠀ 1 Tbsp maple syrup ⠀ 1/4 tsp vanilla extract ⠀ 1 Tbsp coconut oil , melted⠀ Pinch of salt⠀ ⠀ INGREDIENTS FOR THE MATCHA LAYER:⠀ 3/4 cup cashews, soaked for 6h⠀ 1/4 cup almond milk ⠀ 1 Tbsp maple syrup⠀ 1 1/2 tsp lemon juice⠀ 1/4 tsp vanilla extract ⠀ 2 tsp matcha powder⠀ 1 Tbsp coconut oil, melted⠀ Pinch of salt⠀ ⠀ How To Make: 1.Process all the until broken down and add the rest of the crust ingredients until a dough is formed.⠀ 2.Press into a 4’’ spring mold evenly and place into the freezer for 30 min until it firms up.⠀ 3.To prepare the lemon filling rinse and drain the cashews. Then, blend all ingredients together (except coconut oil) in a high-speed blender until nice and creamy. ⠀ 4.Add melted coconut oil and blend for a few more seconds until well incorporated. ⠀ 5.Pour the mixture over the base and freeze for at least 3 hours.⠀ 6.Once the first layer is set, prepare the matcha layer the same way. Pour over the mold and freeze again for another 3h. ⠀ 7.Remove the cake from the mold and place it in the fridge for 1h before serving. ⠀ 8.Dust the cake with matcha powder & decorate with blackberries!   • Lentil fritters with cilantro-tomatillo dip by @yummyyatra 💚 Recipe: Ingredients⠀ For the lentil fritters ⠀ 1/2 cup mung beans (yellow split)⠀ 1/2 cup red lentils⠀ 1 small red onion, finely chopped⠀ 1/4 inch piece ginger, grated⠀ 1/4 tsp ground pepper⠀ 1 jalapeño, seeded and chopped finely⠀ 1/2 cup fresh cilantro, chopped⠀ Salt⠀ Neutral oil for deep frying⠀ ⠀ How To Make:⠀ Wash the mung beans and red lentils thoroughly and soak them for about 1 hour in hot water⠀ Drain the water and put them into a processor along with the jalapeño, grated ginger, ground pepper and blend into a paste. Add just a couple of drops of water if your processor/blender needs help.⠀ Transfer to a bowl, add the chopped onions, salt, chopped cilantro and set aside. ⠀ Heat oil in a deep skillet (low-medium heat) and gently drop a spoonful of the lentil paste into the oil. You can use another spoon to push the paste into the hot oil gently. ⠀ Cook them on low-medium heat until they turn golden. ⠀ Make sure the oil is not too hot before you drop the paste into it or else, it will turn brown on the outside but the inside may remain uncooked. ⠀ Serve piping hot with your favorite dip.   • @vegaliciously making our mouths water with this Spinach Ravioli with Cashew-Truffle filling. 😍 If you want to impress all your family with something absolutely delicious, you have to try this recipe out, it’s absolutely mind-blowing! Recipe 👇 - INGRENDIENTS: 250 g fresh spinach 250 g all purpose flour a splash of water 150 g cashew nuts 50 g macadamia nuts 2 tbsp nutritional yeast 1/2 tsp salt 4 tbsp truffle oil - METHOD: 2. place the spinach leaves in a saucepan and sauté for 5 minutes. Let cool down completely. 3. Place spinach in a food processor and process until creamy. Add in little by little flour and splash of water and process until the dough sticks together. 4. Cover the dough and let rest for 30 minutes. 5. for the filling, place the nuts in a bowl and cover with boiling water. Set aside for 30 minutes. 6. Rinse the nuts and Place them in a food-processor. Add in a splash of water, truffle oil, salt and nutritional yeast and process until perfectly creamy. cover and set aside. 7. Using a pasta machine roll out the dough until it’s about 2 Millimeters thick. 8. Press a glass into the ravioli sheet and set the ravioli circles over a floured surface. 9. Each raviolo is made of 2 circles; put 1 tsp of truffle cream in the middle of a circle, moisten the edges of the dough with a pastry brush and cover with another circle. 10. Press the edges with a fork so that it wont open while boiling. 11. if you want them to be a little “al dente” let them dry out overnight on a floured surface. 12. Cook in boiling water for 5 minutes and serve with a dash of truffle oil and some macadamia cheeze. 13. Enjoy! 😆

The perfect recipe to share with the office over tea or coffee at elevenses Raspberry Coconut and Banana Loaf (Vg) Such a simple all in one vegan loaf cake. It needs no adornment, the raspberries add moisture and a tang to the creamy coconut flavour. Just serve in thick slices. Serves 10 Prep time 15 minutes Cook time 50g coconut oil 50ml vegetable oil 100ml agave or maple syrup 175g spelt or plain flour 1 ½ tsp baking powder 75g ground almonds 125g desiccated coconut 3 medium, ripe bananas, peeled finely grated zest 1 lime 175g raspberries 30g coconut flakes 1. Line a 900g loaf tin with non-stick parchment. Preheat the oven to 180C/fan 160C/gas mark 4. 2. Melt the coconut oil in a small pan or microwave and stir in the vegetable oil and agave. Sift together the flour and baking powder and then stir in the ground almonds and desiccated coconut. 3. Blend the bananas and lime zest in a food processor or mash and mix by hand. Add the oil mix and blend again and then stir in the dry ingredients. Gently mix in ¾ of the raspberries and pour the mix into the tin. 4. Top with the coconut flakes and remaining raspberries pressing them gently into the mixture. Bake for 1 hour 15 minutes, but check the top after an hour and cover lightly with foil if beginning to brown too much. Cool in the tin.   • Starte lecker und gesund in den Tag! Frühstücken gehen ist eine meiner Lieblingsbeschäftigungen, weil es so viele tolle, gesunde und leckere Möglichkeiten gibt. Dafür liebe ich das Stadtleben. Hier esse ich eine Acai-Bowl und trinke dazu einem Mandelmilch Cappuccino in eeeextra groß. Veganes Frühstück ist auch außerhalb kein Problem. Aber warum eigentlich Vegan? Ich bin ein Freund der basischen Ernährung und ein Freund von viel essen. Nun sind Milchprodukte, Fleisch und Fisch in einem sauren Bereich. Hinzu kommt dass wir durch Stress und verunreinigtes Trinkwasser zusätzlich Säuren bilden. Außerdem zerstört die Massentierhaltung unser Ökosystem und ich will einfach keine Tiere essen. Vegetarisch war im Übergang eine Option, nur hemmen Milchprodukte die Aufnahme wichtiger Vitamine und Spurenelemente und Zack, da bist du Vegan. Versteh mich nicht falsch, jeder soll essen was er will und glücklich damit sein. Jedoch werde ich immer wieder gefragt wie ich es geschafft habe in kurzer Zeit fast 30 kg abzunehmen und dass dann über Jahre zu halten 🤷🏻‍♀️ eben genau so! Und es geht mir hier nicht um size Zero, das ist bullshit und keiner soll sich gängeln oder irgendeinem Trend hinterher laufen. Du sollst dein Wohlfühlgewicht erreichen. Inzwischen gibt es aber in Berlin und an vielen anderen Orten Pfandbechersysteme wie die von @recup2go 🥤Damit kann man sich in vielen Cafés und Bäckereien, wie in meinem Fall bei @biocompanyofficial, einen Kaffee holen und den Becher hinterher bei irgendeinem teilnehmenden Betrieb zurückgeben. Hoffentlich machen bald noch mehr Unternehmen mit! ☺️ Es gibt von Recup übrigens eine praktische App, in der man nachschauen kann, wo es die Becher gibt und wo man sie zurückgeben kann 📱

But it’s also us...changing up our daily habits. Care more about pollution, plastics in our oceans & waterways, waste, child labour, recycling, upcycling, reducing & reusing. It’s about other people having basic needs met. Care about social justice, indigenous sovereignty, environmental protections, animal cruelty, stop the mining, invest in alternatives. I believe most people are good at their core & our natural drive is to serve humanity & our planet. Make changes, no matter how small they seem. I started with Hemp, then the rest snowballed.
