Pasta again🤗 bored of it? Now that the weather is getting warmer and warmer, I start eating more and more pasta. Maybe because it reminds me so much of summer. Basil and tomato are my pasta synonyms and my fav pasta ingredients (olive oil I won’t count in cause I’m incapable of making any pasta meal without it. This one has only tomatoes of the two, but I have my beloved smoked paprika for intensive flavor. What are your must pasta ingredients? So curious!

Here’s the quick recipe for this. Guys, so easy😉 Done in 10-15 minutes!
Baby Tomato and Mushroom Pasta
Ingredients for one:
1/2 cup baby tomatoes/ halved
1 cup baby sized button mushrooms
1 tsp smoked paprika
Chili to taste
2 spring onions
1/2 cup almond cream
1 tbsp shoyu /naturally brewed soy sauce
1. Saute mushrooms and chopped spring onions on olive oil, with spices. Add pinch of salt and 1 tsp shoyu
2. When mushrooms are starting to soften, add chopped baby tomatoes. Then add cream and rest of shoyu.
3. Saute for maybe a minute, until the mushrooms are done, add chopped parsley and cooked pasta. Check if it needs more seasoning.

1/2 šalice cherry rajčica
1 šalica malenih šampinjona
2 mlada luka
1 žličica dimljene paprike
1 žlica Shoyu
Pola šalica bademovog ili sojinog vrhnja
Pirjati gljive sa začinima i prstohvatom soli na maslinovom ulju, dodati mini rajčice i još kratko propirjati.
Kad su gljive omekšale, dodati vrhnje i ostatak shoyu-a. Još kratko propirjati i dodati peršin i skuhane pirove rezance.
Ja još onda dodam malo maslinovog za okus.

Veggie Stir Fry With Spicy Mango Sauce, Crispy Tofu And Jasmin Rice 💚
Spicy Mango Sauce:
1 cup chopped mango (fresh or frozen)
1 small red onion
4 garlic cloves
1 tbsp chopped ginger
Juice of 1 orange
1 tbsp coconut aminos
1 tbsp sriracha
1 tbsp maple syrup (or sweetener of choice)
1/2 tbsp tapioca starch
1/4 cup water
Extra salt to taste
1/2 tbsp neutral oil (for frying)
1 package extra firm tofu
2 tbsp tamari (or soy sauce/coconut aminos)
1/2 tsp garlic and onion powder (each)
1 tbsp tapioca or corn starch
Optional: 1 tsp mushroom umami flavor (@traderjoes)
Lots of chopped veggies (I used green asparagus, sweet mini peppers, green onions, snow peas, rainbow carrots)
Jasmin rice (cooked)
Preheat oven to 400 F/200 C.
Cut tofu into bite sized cubes, add them to a bowl and toss first with tamari sauce and spices, then tapioca starch until evenly coated. Bake on a lined baking sheet for 15 minutes, give them a toss, and bake for another 10 minutes until crispy.
In the meantime finely dice onion, garlic, ginger and jalapeño (seeded for less heat). Add oil to a small pan on low to medium heat and fry onion and jalapeño for 5-10 min until soft and fragrant, then add garlic, ginger and mango and cook for another few minutes.
In a small bowl whisk together water, orange juice, coconut aminos, maple syrup, sriracha and tapioca starch until smooth. Stir into the pan and heat up until bubbly.
Let cool down a bit, then blend up sauce in a blender or food processor until smooth.
Stir fry your veggies in batches in a wok or large pan with a tbsp of water or a few drops of oil and add them to the mango sauce. Serve with rice and baked tofu cubes and enjoy 🥰
It is crazy how quickly time is flying by! Tomorrow is already my last day at the AZ Department of health services. On to the department of education next week! 🥳 I am definitely enjoying public health much more than I originally thought. Most people don’t realize that being a dietitian is SO much more than creating meal plans! For some it looks like creating policies to ensure every person has access to food, or doing research to determine where to build the next grocery store, finding solutions for senior malnutrition due to isolation or lack of resources, or making sure pregnant women and infants get proper nutrition, or that children in poverty get lunches without discrimination. And that’s just a small segment of public health! The opportunities are endless in this field and it just gets me so dang excited 😂🤓🥳 .
This dinner is easily one of my faves.
1 Spiraled zucchini, 1 cup cooked lentils, and 1/2 cup @raoshomemade marinara sauce. Topped with fresh cilantro from the garden 🌱
Avocado egg salad sandwich 🥑 🥚 combination of these two just can’t be wrong. Because avocado is so rich, you don’t have to add mayo for this salad. It’s easy and so tasty 😋 recipe below.
1 medium avocado (cut in small dice)
2 hard boiled egg ( cut in small pieces)
2 Tbl spoon Greek yogurt
1 teaspoon lemon or lime juice
1 table spoon dill weed
Salt and pepper to taste
Mix all ingredients together in a bowl. Add salt and pepper to taste.
He got people off of life support by feeding them greens through a feeding tube! Amazing!! Is there anything a plant-based diet can’t do?

I wasn’t “out of shape” by medical standards in any of these images. My weight varied by no more than 5 lbs, up & down, image to image. But, you see it right? I had to see it in images, from an outsider’s perspective to be able to acknowledge the changes.
From the outside I see muscle gain & tone.
Physically, on the inside, I enjoy the sensation of healed injuries & regained strength (lost annually starting around the age of 30). I’ve lost inches not necessarily numbers on the scale.
From the outside, I observe a sense of confidence in a mama journeying through the joys & challenges of family life.
On the inside, emotionally, I possess an awareness of & set boundaries with a greater sense of purpose as a wife, mother, & business owner.
Why choose this lifestyle? I want to be my best for those I love.
This lifestyle IS the reason for my transformation. Now I’m seeking to pay it forward. I know if I can experience this transform, you can too! When I first came across this coaching opportunity I def didn’t have the money to get started.
I mean $160 was not chump change for me back then. We were literally just getting by.
So why did I invest anyway?
Because I was terrified thinking about what my life would look like if I didn’t at least TRY😳
Would I be chained to a desk and the will of a 9-5 job for the next 40 years? Would I always be “just getting by”? If I can’t afford $160 right now, what would happen if I got a flat tire or some real emergency came up? How would I pay for that?
It was those thoughts that convinced me to go for it. Because if I didn’t get another stream of income going, my situation wasn’t going to change. I didn’t let my fear win that day and I’m forever grateful to myself for that💕
Because 50lbs lost, several paid vacations/retreats, the added income and fulfillment, the friendships I’ve made, is all worth a lot more than $160🙏
Also I went into $30k of student loan debt as an investment in myself for the HOPE that I could one day live a great life with a great job. I think I can come up with $160 to invest in a potential million dollar business opportunity. Is it warm where you live, how do you celebrate it?
✳️Healthy Habit #16: Clean up your water! Many people believe tap water to be clean and safe to drink; however this is far from the truth.☠️ Dangerous chemicals, fluoride, heavy metals and other compounds can be found in tap water, and many times utility companies don’t even treat the water to prevent heavy metal contamination until the heavy metal is discovered.
Herbicides such as atrazine, a known endocrine disruptor that impacts immune function and is linked to birth defects and increase risk of ovarian & breast cancer; heavy metals such as lead which is toxic to the body, metalloids such as arsenic which has been linked to cancer, and other dangerous materials such as disinfection byproducts produced from chlorine are potentially harmful and even carcinogenic.
Unfortunately, studies have revealed that at least 25% and up to 40% of bottled water is actually tap water, and bottled water is actually LESS regulated than tap water!😱Plus it contains BPA and other toxins which are leached into the water from the plastic. If you must choose bottled water (which is still always better than soda!), spring water is best.
A recent test done by the Environmental Working Group tested 10 brands of bottled water and uncovered 38 different contaminants, including Tylenol, bacteria, industrial chemicals, dangerous disinfection byproducts, arsenic, caffeine, and nitrate to name a few.
So what can you do to clean up your water? Start by investing in a good water filter, and it needs to be stronger than a water pitcher filter such as Brita. Reverse osmosis is a great option such as AquaTru, but it also removes natural minerals in the water. The most reliable filters use gravity, not electricity, to remove metals, chemicals and other toxins from water. We personally use the @berkey_filters Berkey System, which uses ceramic filtration technology to remove toxic elements, parasites, bacteria and other contaminants from water. Just note that fluoride and arsenic filters are optional. The Big Berkey can be found on my Amazon link or the Big Berkey website. I am by no means a water expert, these are just a few brands that I found to be the best!🚰💙

romanesco (i am the only person who had never heard of this?) is part of the cruciferous family of veggies (like cauliflower or broccoli)🥦
cruciferous vegetables are loaded with health benefits - not only are they high-fiber, low carb foods (making them great for weight loss and helping to keep you full🙌🏼), they contain powerful compounds such as glucosinolates (with sulforaphane being the most famous at the moment) that have been associated with reduced inflammation, reduced cancer risk, and increased detoxification activity & antioxidant production👏🏼 (check out Dr. Rhonda Patrick's work if you want to learn more about sulforaphane - super high in broccoli sprouts) ⠀
the compounds in cruciferous vegetables can compete with iodine absorption in the thyroid in high levels, so if you have a thyroid condition or struggle with hypothyroidism, you may not want to be going ham juicing kale everyday✌🏼
• preheat oven to 400 degrees ⠀
• set the whole romanesco on a baking sheet and season- I poured over oil olive, a generous squeeze of lemon juice, garlic powder, salt & pepper ⠀ ⠀
• bake for ~25-30 minutes, until it has softened ⠀
• to make it crispy, broil for ~3-5 minutes at the end ⠀
super easy, super delicious, and so pretty! You can slice into larger chunks to eat as a side dish or dice up and store to add to salads throughout the week🥙 ⠀
