Gluten Free - Courgertti Noodle Prawn Stir fry for dinner last night!
2 packets of prawns
1 bell pepper/brocolli
4 spiralised courgettes
2 cloves garlic
1/4 cup soy sauce
2 tbsp rice vinegar
2 tsp fish sauce
2 tbsp honey
Cook prawns until just done, take out of pan and leave to sit. Cook the garlic in the pan with oil (any of choice) and cook for 2 mins till fragrant. Add in the carrots, pepper and courgetti cook 5/6 mins until tender. Add half the sauce (all just mixed together) and cook for 2 mins, then add in prawns and extra sauce and cook for a final 2 mins. Ready to serve and eat!
Attempted my very first smoothie bowl this morning, and I would say it was a success! 🥄 • 1/2 cup of @siggisdairy 🥣
• 1 cup of pre-cut fruit (banana, strawberry, mango & pineapple) 🍌🍓🥭🍍
• 1 tsp. of #rawnice Pink Pitaya powder 🍉
• Chia seeds, sunflower seeds, and coconut chips sprinkled on top 🥥
• 1/8 cup of blueberries sprinkled on top

According to this amazing book I am listening to, there are two kinds of mindsets: a fixed mindset and a growth mindset. It turns out that research study upon research study show that those who have more success in whatever they are doing have a growth mindset. If you answered A, you have a fixed mindset about running. If you answered B, you have a growth mindset about running. 🤷🏼♀️ I've been both A and B in my life. When I was in a fixed mindset about running, I avoided running and had all kinds of excuses why. Running a mile non-stop would have been an accomplishment. When I have a growth mindset about running I get to work and I train to improve. I push myself to speeds and distances I had no idea my body was capable of. I believe I can do more and so I learn, grow, and do more. 🏃🏼♀️ Health, fitness, and running are all possible for you wherever you are today. Other things you've said you could not achieve are possible. Set your mind to growth mode and let's go!

One person might rave about paleo, for example, and the next condemn it (I like paleo by the way, I don't follow it because I love rice too much, but I think it's got great health benefits)
When you read something, check the author for credentials. If there's references too then there's a good chance it's good information.

I have been really bad lately on keeping you all up to date but for the past 3 weeks I have been working and living in Sicily and omg how amazing the gluten free journey has been! This is a small taste of some of the amazing gluten free food I’ve been eating. A delicious smoked octopus with purple mashed potato with amazing olive oil! Yesterdays (and will be today's) lunch. Lemon rice, bbq chicken with peppers. It turns out i'm not great at meal prep so I'm trying to work out how to best overcome this. I've been buying microwave rice, premade chicken, fish, prawns etc. And some veggies premade/microwaveable. This seems to be working but obviously isn't the cheapest way around this! Feel free to throw over some suggestions, gluten free of course! #mealprepmadness

Have you ever picked up a bag of flour and noticed how much flour is on the outside of the bag? When shopping - reading labels, finding gluten free items, and separating gluten and gluten free items can be difficult. Why not use our specially designed, sturdy, easily cleanable organic cotton bags to help with the process.
Banana and cranberry muffins. 🍌🍇🍰 Yes, muffins contain sugar and fat but it's all about moderation. Muffins are a go-to snack for me they are so versatile, can be eaten on the go, and freeze well. They are also an excellent way to reduce food waste by using up the fruit and veg spoiling at the bottom of the crispier.
To improve the nutritional quality:
- Replace sugar with fruit or make savour muffins and omit the sugar all together.
- Use wholemeal/high fibre flours such as buckwheat, teff, quinoa etc
- Use skim milk to reduce the total fat - Reduce the amount of butter and replace with yoghurt, this decreases total fat, increases protein and also has the benefit of probiotics for gut health.

Fish Dumpling filled with Mung Beans
🏮元宵节-正月十五 ：Yuánxiāo jié-zhēng yuè shí wǔ（the fifteenth day of the first lunar month, also called “ Lantern Festival” (“Yuan Xiao Festival), the last day of Spring Festival. .
⭕️汤圆，”tang yuan”, the traditional food eaten is a glutinous rice dumpling filled with sweet stuffing. They are sticky, sweet and round, symbolising family reunion , happiness and people’s nice (愿望, ”yuànwàng”) wishes for the future life.
🎴However, l made these savoury round fish dumplings filled with mung beans instead. It’s the meaning that counts. They are so fresh, naturally sweet (mackerel) and delicious 😋! The sweetcorn kernels provide the slight sweetness, pop and yum!
fresh mackerel fish, 500g 🐟
1 Tbsp salt
1 Tbsp white pepper
2 Tbsp cornstarch
half corn 🌽 kernels
1/2 cup cooked mung beans
1 L fish/chicken stock (homemade)
1. Scrape flesh from mackerel. Keep the skin and bone (for the stock).
2. Mortar and pestle fish flesh with salt and cornstarch.
3. Add corn kernels.
4. Wet hands, wrap mung beans inside the fish balls/dumplings.
5. Boil the fish stock. Carefully put into boiling stock. Cook for 10 minutes.

B R E A K F A S T ➡️ GF Blueberry Oat Pancake 😋
This was my first ever attempt at oat pancakes. I wasn't meant to have one big one but my mixture was a little runny so I just thought "sod it"
It was really tasty though! Definitely something I need to practice but I'll hopefully have the recipe down by pancake day 😉
I have today off work which is a rarity (I'm working tomorrow instead) but I don't know what to do with mini man. He still has the tail end of a cold so I do want to get him some fresh air really.... Beach walk maybe 🤔
